Thai Vegetarian Noodles

If I eat noodles in Thailand, they need to be as flavorful as possible. That means adding extra toppings like fish sauce, chili flakes and a few scoops of vinegar to liven things up.

I don’t normally add any sugar, like a lot of Thais do, but sometimes a bowl of Kuay Teow comes with sugar already included. Believe it or not, this bowl is completely vegetarian from Baan Suan Pi.
