I’m talking crispier than you can imagine.

That perfectly golden crown on the top of each nugget of pork belly is so crispy that it actually gets stuck in your teeth like popcorn, and it’s an absolutely beautiful thing.

Kuay jab (ก๋วยจั๊บ) is a Thai Chinese soup dish of rice noodle rolls, known for its porky peppery broth, and typically including a series of pork organs and slices of crispy pork belly.

The main dish they serve at Kuay Jab Mr. Joe (ร้านก๋วยจั๊บ มิสเตอร์โจ) as indicated in their name is kuay jab (ก๋วยจั๊บ). However, the real reason everyone eats here is because of their insanely crispy pork belly.

Let’s begin with the kuay jab (ก๋วยจั๊บ), and I ordered the special bowl (pisayt พิเศษ) that’s a bit bigger in size and contained a few more pig organs.

The kuay jab (ก๋วยจั๊บ) came with soft rice noodle rolls, slices of crispy pork belly, lungs, liver, skin, and intestines… I think those were the main components, although I could be missing a few.

Some chili flakes and vinegar to season

The kuay jab (ก๋วยจั๊บ) was in my opinion quite mild in flavor and not very peppery. However what I did like is that it wasn’t too salty.

I prefer the broth from Kuay Jab Nay Lek (ก๋วยจั๊บนายเล็ก) in Chinatown that has a much more burning peppery taste.

But the highlight of the kuay jab at Kuay Jab Mr. Joe (ร้านก๋วยจั๊บ มิสเตอร์โจ) is the selection of pig parts involved.

I made sure to add plenty of chili flakes and vinegar to my bowl of noodles to get it tasting the way I love it.

Their chili flakes are fiery hot and wonderful.

Moo krob (หมูกรอบ)

The crispy pork belly (moo krob หมูกรอบ) you get in your bowl of kuay jab is not enough; You’ll need to order another plate of extra pork belly on the side.

Price – 55 THB

Sliced up into nugget sized bites, with the layers of the belly clearly and attractively visible, this is truly the highlight of eating at Kuay Jab Mr. Joe (ร้านก๋วยจั๊บ มิสเตอร์โจ).

It’s everything you could want in crispy pork belly, the layer of meat is salted and flavorful, the fat oozes into the meat, and finally you have that impossibly crispy skin at the top.

They serve it with dark soy sauce, but I think plain is best.

It’s served with dark sweet soy sauce for dipping, which does contrast the saltiness of the pork. But for me I just liked it as is, with no additional sauce.

There’s no doubt it’s some of the best crispy pork (moo krob หมูกรอบ) you can eat in Bangkok.

Finally, they offer khanom jeeb (ขนมจีบ) on their menu, the Thai equivalent of siu mai.

These little pork dumpling bites are not my personal favorites, as they are usually on the mushy side in texture (I prefer Hong Kong style that has a little more of a more bouncy shrimp texture).

But nevertheless, the khanom jeeb (ขนมจีบ) are a decent snack as you wait for your crispy pork to arrive.

Kuay Jab Mr. Joe (ร้านก๋วยจั๊บ มิสเตอร์โจ) is a shophouse restaurant in Bangkok that specializes in serving rice noodle roll soup known as kuay jab (ก๋วยจั๊บ).

But what they really excel in are all the pig parts and most notably their crispy pork belly (moo krob หมูกรอบ) which is some of the crispiest you’ll find in all of Bangkok.

How to get there: Kuay Jab Mr. Joe (ร้านก๋วยจั๊บ มิสเตอร์โจ) is located along Thanon Chan in Sathon. It’s not too far from Surasak or Saphan Taksin BTS stations and it is walkable from either station in about 15 minutes or so. But it’s probably best to get there by taxi as the walking routes are not great.
