Chicken w/ Ginger ไก่ผัดขิง

My ginger love affair began in East Africa where I used to guzzle bottles of potent ginger soda known as Stoney Tangawizi (the best soda on earth in my opinion).

Gai pad king (ไก่ผัดขิง), or chicken with ginger, is a fairly common dish in Thai cuisine.

A little obvious, but I especially like it because of the high concentration of ginger in the dish, probably about 30% ginger shreds. The ginger is quite mild, probably made with young ginger, so it’s not too strong but the flavor comes through nicely.
